Rich in proteins: Amongst various health benefits of different kinds of lentils, the most important benefit is that it is rich in protein. Green Moong:  

Whether you eat them whole, with the skin on, without the skin or split, they are extremely beneficial in providing your body with proteins. Green moong sprouts are a wonderful source of protein, is high in dietary fiber and also a good source of manganese, potassium, folate, magnesium, copper, zinc, and vitamin B.

Yellow moong dal:

In addition to proteins, yellow moong dal is rich in iron and potassium and very easy to digest. It can be easily given to babies as their first solid meal in the form of khichadi combined with rice. Arhar or toor dal:

Urad dal:

Urad dal is usually called black dal when whole and white when it is skinned and split. It is great in taste and in nutritional content. Urad dal is one of the best options to improve your digestion. Matar Dal:

Matar dal is also one of the most versatile and easy to cook dals available in India. You can use the yellow variety or the green. Chick pea/ Bengal gram/ Chana dal:

This dal comes in two forms: a smaller one with a dark skin, which is called kala chana and the larger white one which is known as kabuli chana. You can cook it in different ways and it can be sprouted to add to a salad. It has anti-inflammatory qualities, is high on folate, molybdenum, manganese, copper, fiber, protein, iron and zinc. KULTHI DAL/ Horse Gram:

Horse Gram is one of the best sources of calcium in comparison to other lentils and hence it is good to develop more strength in your lower body. It is also high in protein, low in fat, and in lipid and sodium content, and is good for those who have diabetes or suffer from obesity. When can we start giving lentils to kids?

Due to so many benefits of different kinds of lentils, giving lentils to babies and growing children is very important to promote proper growth and development in kids. Lentils can be safely given to a baby when he/she is 6 or 8 months old or when he/she starts taking foods other than milk. At that time, you can give lentils in a very watery/liquid form. Sometimes lentils are gaseous, so you have to watch. To minimize the gas problem, you can add some veggies and make a puree. The fiber in lentil helps the child in smooth and regular bowel movements. Ingredients:
  • 1 cup chana dal
  • 3-4 garlic cloves

Procedure:

Ingredients:

  • 1.5 tsp yeast
  • 2 tsp Molasses or jaggery or coconut sugar
  • 1 ½ cups warm water (or little more)
  • 1 cup Sorghum flour
  • 1/2 cup Amaranth flour
  • 1/2 cup Potato starch or Wholewheat Flour
  • 1 tsp Salt
  • 1/4 cup Chia seeds (grind into powder)
  • 4 tbsp Iyurved’s 7 nuts & 5 herbs savoury spread (order here)
  • 1/4 cup Psyllium husk (Isabgol)

Procedure:

  • Combine Ingredients in a bowl
  • Make sticky dough
  • Cover the dough in the bowl with dry towel and a lid and leave to rise double or 2 hours in a dark place
  • Preheat at 200 celsius for 5 minutes

  • Transfer dough to a surface. Use lots of any dry flour and roll to shape dough into a log and tuck in the sides to make it fit the bread loaf pan (grease the pan if necessary).
  • OR can also bake dough in a pie round shape (see left pic)
  • Add sesame seeds on top of the bread for added nutrition (optional)
  • Slit dough top with sharp knife
  • Bake at 200 celsius for 60-70 minutes at lower/middle rack
  • Once done, leave to cool completely on a rag outside.
  • This bread is good for health!

Sweet Potato Millet Pizza

Rather a slice of Pizza can be made much healthier for kids’ breakfast than having cornflakes in the morning. Using the right combination of flour and seeds will add up to the required nutrition for the day.

INgredients:

Teff (African grain or use Jowar), Ragi, Singhada, Wholewheat, Potato starch or boiled potato or boiled sweet potato (to add softness) and Psyllium husk to bind the dough together. Iyurved’s 5 herbs and 7 nuts savoury spread (order here)

PROCEDURE:

Follow the normal recipe of making the dough by replacing all purpose flour with the combination of flours used in equal proportions above. Add 2 Table spoons of Flaxseed powder to the dough. If you don’t have flaxseed then add psyllium husk. If your recipe calls for oil, use cold pressed seed/nut oil (coconut or sesame) to enhance nutrition even more. There is no oil mandatory in this recipe. Add ½ tsp salt and oregano powder for flavour. Leave the light to rise for 2-3 hours. These are not refined flours so will take more time to rise. Once risen, roll or press with your hand to make pizza base (use lots of flour to do that if it sticks to surface). Apply Iyurved’s 5herbs and 7 nuts savoury spread (order here) and pizza sauce, cheese and veggies if you like. Bake for 10-15 min at 220 Celsius (depends on how crispy you want the pizza).
You can also add nutritional yeast while making the dough to enhance nutrition and cheesy flavour.
