  • Traditionally, ghee was made with yogurt. Yogurt was set in clay pots to preserve and enhance the nutrients (calcium, phosphorus, iron, zinc, sulphur etc). Ingredients & Procedure:

After Rise (part 1)

MIX (Wet)

  • 1.5 tsp yeast
  • 2 tsp Molasses or jaggery or coconut sugar
  • 5 tbsp Iyurved’s 5 herbs and 7 nuts savoury spread (order here)
  • 1 ½ cups warm water (or little more)

MIX (Dry)

  • 1 cup Teff flour
  • 1/2 cup Ragi flour
  • 1/2 cup Potato starch
  • 1 tsp Salt
  • 1/4 cup Chia seeds (grind into powder)
  • 1/4 cup Psyllium husk (Isabgol)

MAKE DOUGH

  • Keep aside 1/3 cup dry ingredients
  • Combine Wet and Dry
  • Make wet, sticky, shaggy dough (husk drinks water)

RISE (part -1)

  • Cover and rise for 1 hour in dry dark area

RISE (part-2)

  • Blend remaining dry ingredients into dough
  • Pat dough to make rectangle/square
  • Roll back to make log
  • Brush with any dry flour
  • Fit into greased bread pan (tuck edges inwards)
  • Cover and Rise for 45 minutes

BAKE

  • Preheat at 200 celsius for 5 minutes
  • Slit dough top in any design with sharp knife (optional)
  • Bake at 200 celsius for 60-70 minutes

Digestion is amongst the most common concerns in kids today. This is primarily due to the food choices. Most of the meals nowadays comprises easy-to-consume options e.g. plain roti, yellow dal, potato, bread, white rice, pasta, cake, soup, noodles, cookies. While these food choices don’t lack nutrition entirely (if made at home), they do miss out on an essential macro-nutrient- Fibre.

Fibre is the non-digestible carbohydrate. It is responsible in keeping our digestion healthy and regular. Constipation is a nutrient-deficient disease which is caused by lack of fibre. The usual cycle of digestion is between 1 to 1.5 days. However, with the current food choices, this time has become 4 days. So even though your child may be regular, he might still be 4 days late (constipated).

Fibre travels to the large intestine without being digested and also helps to flush out toxins like excess cholesterol, lead, mercury etc that get released from food. In the absence of Fibre, these waste products get reabsorbed by the body. In addition, fibre is also the food for the good bacterias living in the large intestine (gut).

In older times, humans had the capacity to consume 100g fibre since plants were more accessible than hunting animals for survival. This has reduced to 1/10th now. Just with the addition of Banana Stem, a child can meet the daily fibre requirement considerably. Banana stem is 60% fibre, which is a god-sent solution to improper digestion.

Moong Daal (Mung Bean)

It is an outstanding prebiotic. It has been used in Ayurveda for over 1000 years to make medicine for digestion.

Other than being a food for the bacterias in the Gut, it is the most powerful antioxidant amongst all lentils, and is also loaded with many micro-nutrients. Mung bean is also extremely high in Protein, which digests slowly and keeps the kids energetic and Fit.

Due to these powerful results, billion dollar companies in the west are moving to Moong Daal (Mung bean) to prepare plant-based non-veg. protein which is more nutritious than original. (What are other easy protein sources for kids?)

Soaked Mung bean can be cooked for a longer while with extra water into a soup or blended into a paste of Dal for small kids. Its so rich in good bacterias and fibre that it helps in easy digestion and manages gas, colic, bloating in kids.

Recipe for Spinach Lentil wrap:

  • 1cup whole mung bean (soak overnight) and blend/purée with spinach leaves (boiled or not) and enough water to make pancake like (not too runny) batter (Does soaking lentils or beans benefit health?)
  • Add salt, pepper and carrom seeds (optional)
  • Spread on hot non-stick pan (add drops of oil to cook). Covering the wrap helps to cook faster and better.
  • Flip to cooks on other side.
  • Take off the pan and serve with sauce or dressing (recipes of some super healthy homemade spreads)
  • Stuff and roll with cheese, lettuce or salad leaves, grated carrot, mashed avocado, sliced tomato, cabbage and/ or other veggies or
  • Just serve plain.
Recipe for Mung Bean Soup

  • 1 cup mung beans of any variety (wash and soak in double water for 8 hours or overnight)
  • 4 cups water for cooking
  • 1 teaspoon turmeric powder
  • 3/4 teaspoon cumin powder
  • 1 teaspoon ghee (optional)
  • Salt as per taste (no salt for babies under 12 months)

Add soaked mung bean to 4 cups water along with turmeric, cumin and put to boil in a pressure cooker or covered container. Once it whistles twice or is completely cooked and cooled, take it in a mixer to grind it to a paste. Add some ghee on top. Serve warm.

Is Whey protein good for children?

School going children in the age group of 3-15 years are in rapid body growth phase. Comprehensive nutrition, comprising of carbs, fats and protein along with essential minerals and vitamins is a must to include in their diets. What is whey protein and is whey protein good for child’s growth and development?

Most children are fussy eaters during this age. They eat only certain foods, for e.g, Spinach a.k.a Palak is a royally ignored food by kids, but it is such a nutrient-dense food. It is packed with over 15 vitamins and minerals- vitamin K, vitamin A, manganese, folate, copper, vitamin B1, vitamin B2, vitamin B6, vitamin E, vitamin C, calcium, zinc, fibre, phosphorus, choline and antioxidants. Don’t be overwhelmed, this is just to give you an idea of how nutritious it is!

Kids being fussy eaters miss out on so many essential nutrients which their body needs. In fact, they need it more now than later in life. That brings us to the question – Should dietary supplements be given to kids? Can Kids consume whey protein? The real and honest answer to this is, it depends!

Is whey protein good for children?

What is whey?

Whey is considered to be a complete protein because it contains 9 essential amino acids. It has low lactose content which makes it easily digestible. Leucine present in whey helps with building muscles too.

Procedure to make WHEY:

Whey protein is made from cow milk yogurt. Churning the yogurt releases butter/cream and leaves behind a yellowish water. This water is whey. Kids can safely consume this fresh at home.

Heating the butter made from yogurt gives traditionally made ghee. This ghee is also called cultured butter because it has live cultures ( probiotic bacterias) which make it medicinal in nature and great for digestion.

How much protein do my kids need?

The suggested intake of protein is decided at 0.8 gm per kg of body weight. For e.g , if your kid is 12-13 kgs, then the amount of daily protein he/she would need will be 10 gm roughly. Natural protein sources like handful of nuts and seeds can easily meet this protein requirements. For athletes or kids in active sports, few studies state that it is best to eat protein within 30 minutes of exercise. This is the period when most of muscle formation or muscle repair happens, and timely protein consumption enables that.

Pro-tip : You can make protein-packed, seeds infused nutritional paratha, which will not only give you 10 gms of protein, but also make it supremely easy to feed your child. Nut cookies are also great protein snack for kids.

When can kids have whey protein powder supplement?

If a child is not meeting the daily protein required for reasons such as (1) she/he is a fussy eater (2) she/he is on a restricted diet due to medical history or lifestyle choice of being vegan (3) lack of availability of protein rich food (4) she/he is an extreme sports person or into tough physical routine. You can add whey protein in milk and give to your child.

What is the best whey protein? The best source, nevertheless, will always be the freshly prepared or procured whey made from cow’s milk yogurt.

When can whey protein powder be unsuitable for my kids?

Though there is no side effect of whey protein, but if the child eats a balanced diet, giving additional dosages of protein supplements can be harmful. High protein levels in body can create kidney stones and also strain child’s liver (with toxic nitrogen build up).

  • 2 tbsp heap-full wheat flour
  • 2 tbsp heap-full cocoa (dark)
  • ⅓ tsp baking soda
  • 2 tbsp coconut oil/ ghee/ any oil
  • 4 dates (paste)
  • ½ tsp vanilla essence
  • 2 tbsp flaxseed powder (take flaxseed and powder it) mixed with 6 tbsp water
  • Jaggery/honey/coconut sugar (to your taste)
  • 1/4 tsp salt
  • 1/3 cup milk (try any milk/ nut milk)

Mix all the ingredients to make a thick batter. Preheat oven for 5 min at 200C and bake for 30 minutes in the middle rack.

The importance of vitamins for kids are many, they help the body grow and work the way it should. There are 13 essential Vitamins — Vitamins A, C, D, E, K, and Vitamin Bs. Some help in eyesight and energy production, while others support healthy nerves and cells and in fighting infection. This article will help you understand the importance of vitamins and when to take supplements.

Vitamins are found in the food we eat and some like D, K can also be partially produced by our body. A balanced meal full of a variety of grains, nuts, vegetables and fruits will meet the daily requirements of vitamins for kids. Nature has packed food in such a way that the nutrition received is well-balanced with complementary nutrients.

For example, Nuts have a variety of Vitamin Bs and E. However, for the vitamins to be absorbed efficiently by the body, they have to be consumed with fiber. So consuming the vitamin naturally in the form of nut itself (vs. a pill) is not only easy but also essential for its maximum absorption by the body. Secondly, consuming vitamins through nut (or any food) fairly reduce the chance of overconsumption of any vitamins. Excessive consumption of any vitamin can have adverse effects on the body organs. Lastly, consuming the nut (or any food) not only gives us Vitamin Bs and E but a lot more added goodness in the form of fibre and phytonutrients. So in nutshell, it’s always more beneficial to consume all the required vitamins through food directly.

When to take supplements?

While it is usually preferred to get the nutrients a child needs from food rather than a pill, syrup or gummy, it is not always possible. That’s because some kids are picky eaters and their intake of food is limited to a chosen few. Or despite consuming healthy complete meals, a child may have a severe deficiency of a particular vitamin due to a prevalent health concern. This may result in a deficiency of any key vitamin in their body.

The next best solution in such a situation is to consume supplements made of real food and fortified with the necessary vitamin. For example, some cereals are fortified with vitamin B12 as its found deficient in many vegetarian kids. Oils can be fortified with Vitamin D for kids who are off dairy. For kids who severely lack intake of veggies or fruits and hence have lagged development can support vitamin A intake through fortified oils too.

Most commonly we hear parents say that their child is active and looking healthy too so there is nothing to worry about nutrition. The most obvious response in defence to further questioning is ‘we also turned out fine without our parents worrying so much about nutrition when we were young’. Let’s understand this assumption closely.

  • Young and active cells: Kids have new and active cells which perform all the necessary tasks they are assigned. For example, hair cells have to maintain thick growth and pigment. They do their job well. Having said that, how soon will they start to show decay in quality depends on how well we are taking care of those cells. We need to protect our cells from free radical damage by feeding them the right nutrition they need for them to work many more years in their most active state. Or else we can see outcomes such as early hair loss or greying.
  • Less contaminated food: Compared to today’s times, food was far less contaminated earlier. The consumption was primarily local, fresh and seasonal without any unnecessary pesticides. This also kept the prices low and consumption up, adding to the daily nutrition.
Occasional consumption of processed food:

  • Children nowadays have access to far more processed food than their parents. These are not only packed months ago, but also high in sugar and sodium, both of which can work in damaging our body cells. At least two meals in a day (today) have some form of processed food on the dining table.
  • Real test is yet to come: When parents say that ‘they have turned out fine’- it is only partly relevant. The real test will come when we see the bones, muscles, other organs performing their best and original function in the old age. Weakening of bones in early thirties is a sign of mistreating our body with the wrong choice of food (and lifestyle etc). Early mensuration, reduced vision, high blood sugar are some other examples which are now happening early in life. Imagine sowing a mango seed. How many fruits will the tree bear will depend on the kind of soil, sunlight, manure and water that is supplied to the seed. However, the result will only show many many years later. Similarly, what we feed out body today will only show many year later. The early years are most important as they lay the foundation of our bones and brain.
